Daph Collection

I love baking! I can't remember when I start to make my 1st cake..10 years ago? I really have no idea about this. I always had been asked by people around "When you open a bakery?" Well, I really can't tell, may be when I think is the time, or when I am ready. Anyhow, now I still enjoy home baking.

New York Cheesecake, Mango Yogurt Cake, Carrot Walnut Cake, Rum & Raisin Cheesecake, Almond Chocolate Cake, Chocolate Cheese Cake, etc. been baking for those again and again, but every time making it I got different feeling, may be this is called "baking passionate". I know still a long way to go, and lots of recipes in mind that I would like to try. Keep going...

Thank you!


8 March 2008, whole day sitting at Starbucks Coffee to work out a plan for Uncle Fu Oven. Until today, UFO flyer is out; and started selling at Foh Sang, Kedai Kopi Kheng Hin and Damai, Restaurant Full Yuen. If you ask what is my feeling right now, I should say I am pleased. Not because of how good the response, just because since the day I start until now, I am pleased with all the supports and help from friends; Kerwin, Tsen, Melvin, Yuan, Brenda, Yong, Sean, Agnes, and a lot friend I not mention here. Truly from my heart: “Thank you so much for all the encouraging words, constant support and advice. Thank you for making a beautiful difference in my life.”

In this one and a half month period, I bought a new oven and two new mixers to faster the baking process. Since everything is new, it’s really took me quite some time to adapt and handle the equipments well to get what is called ‘standard’. I can’t remember how many pieces of UFO I had dumped. By trial and error finally I found a combination that turned on 14th April 2008. My kitchen really full with notes stacked on the wall and with calculator with me all the time during baking…

Poster

If you are a good observer, you should be able to notice this poster around the corner of some coffee shops or cake houses. I wonder how you think about the design?

I know the poster designer in personal.

Frankly speaking, when I first saw the poster design, I indeed felt it was too common for a good designer like him. Basically, UFO is a legendary dessert in Sandakan, and has been well-know for over 50years in the neighborhood, so the design should exhibit reminiscence yet classical look rather than using vivid color like red and yellow. What was that? Tell you the truth, the first thing came to my mind was Sarawak State flag,



No kidding. Don’t you think there is some similarity?

I was a bit disappointed with the design, …….until it has been printed out.

I have to admit that Melvin, the designer has some artistic sense that people like me cannot understand at first glance.

Red, yellow, Black and red used to be the most traditional colors, has already imply the hidden meaning of ancientry and all time favorite food. The striking color can really catch the attention of people when stick on wall either at newly design cake houses or archaic coffee shop. The radian lines neutralize the out-dated feeling for the whole presentation. What a fabulous idea he got there!

海报

近来在亚庇区的许多茶点总会看见这张海报。你有没有发现?

老实说,开始看见设计图时,觉得有点怪,因为印象中的牛屎挞是比较偏向传统和古老的小吃,所以以为海报的色调也会较为黯淡,可是设计者却用了鲜艳的红黄作为主色,我的确大吃一惊。直到海报印了出来,贴在各个面包店或茶室角落时,我才发现设计者的用心,这张在平面上看似平平无奇的海报,立刻显现出它的独特之处,有了不一样的诠释。

红、黄、黑、白,已经是最传统的颜色。放在设计新颖的店铺,客人很容易就发现海报的存在,而且感受到它的古典味道。虽说如此,一些浑圆的线条却隐隐带出时代感,不会让人有老土的感觉,所以放在古旧的陈年茶室一样可以发挥它颜色鲜艳的功效,一眼就看到它的吸引力。

总而言之,设计者的确很有心思,能够看到我们平凡人无法看透的事实,让我对设计者有了更深一层的信心。:)

符家牛屎挞 (UFO)



1955年,当日本军宣布投降,开始撤离马来西亚的同一年,在沙巴州山打根这个小地方,一名薄有名气的蛋糕师傅,制作了全世界第一个别具一格的早餐小点,也就是现在被统称为“牛屎挞”或者“UFO”的甜点。那位蛋糕师傅起初只是将自创的甜点派送给家人和左邻右舍尝试。岂知那种独特的香味和口感竟然让人回味无穷,牛屎挞的名字不径而走,慕名而来的人渐渐多了,他隐隐觉得这种甜点可能会受到广大接受,于是开始大量制作牛屎挞,先在自家经营的海南茶室‘美珍’零售,然后批发给各大茶室贩卖。从此之后,牛屎挞便成山打根其中一个独有的象征。他就是牛屎挞的创始人符和安。


名称的典故

所谓《名字取得好,一生不用愁》,牛屎挞的成功,有一小部分是归功于它名字的怪异和好记,但就算是土生土长的山打根人,也很少人知道牛屎挞这个不雅名称的由来,原来源自一个错误的制作程序。话说有一天,符先生正在烘烤牛屎挞时,好友忽然来访。符先生一时兴起,搁下工作就与朋友闲聊起来。一席话下来,直到闻到一股焦炭味道才匆匆回到厨房揪开烤箱,发现甜点已经被烤焦了。朋友见了打趣说像路边经过看到的牛屎堆,以致往后每次来找符先生时都以这个作为笑柄,逢人就说要来买牛屎堆。久而久之,旁人学着学着,就一起将“牛屎挞”这个称号发扬光大了。
“UFO”这个名号,则是由牛屎挞的外形演变而来。沙巴州共有个民族,而且相互邻居,其乐融融。一些商家在零售给友族朋友时,若将牛屎挞直接翻译,就会显得拗口,基于方便,便根据外形给牛屎挞取了个有趣的名称——UFO。

UFO is a famous dessert originating from Sandakan over 50 years ago. As a dessert, UFO sounds alien. However, it had a unique name in the Cantonese dialect - “ngao si” tart, which means “cow dung” tart. This name came about when a Hainanese baking master, Fu Ah On, was chatting with his old friends one day. He smelled something burning in the kitchen and realized that all the tarts he was baking had been scorched. His friends made fun of him as the burnt tarts resembled piles of cow dung. They nicknamed the dessert “ngao si” tart and the name lingered to this day.
Fu Ah On created the original recipe and started selling the tarts at his Hainanese Kopitiam. The natives who frequent the restaurant called the dessert UFO due to its characteristic shape and appearance. It was well received and turned into a popular dessert. Today, UFO can be found in many local restaurants and has become one of the delicacies unique to Sandakan

简介
牛屎挞的外形其实非常讨好可爱,薄薄一片金黄色的蛋糕垫子,托着胶状似的白色圈圈,一点点烧焦的感觉,包围着中心奶黄馅,像极童年时电视机看到的飞碟模样。这也是UFO这个统称的由来。

牛屎挞奶香浓郁,却依然掩盖不了淡淡的香草香甜,一口吃下去,甜而不腻。底垫表层稍微有爽脆的感觉,咬下去松软适中,加上顶部蓬松的蛋白沫和奶黄馅,若在配上一杯苦涩香浓的咖啡,简直让人回味无穷。


UFO is kind of dessert with a pillow-soft vanilla-flavoured cake base topped with fluffy egg white and centered with smooth creamy custard - each mouthful with a perfect balance.
